SHRIMP COCKTAIL

Shrimp too
expensive? Try this. Clean and cut into bite-size pieces any kind of
fresh-water fish.
Place two heaping
Tbsp. Old Bay Seasoning
2 tsp. salt
1/4 cup
vinegar
one bay leaf
Put ingredients in
4 quarts of boiling water and cook for 5 minutes. Then add fish and cook for 8
to 10 minutes. Drain and chill until cold (around 6 hours). Serve with your
favorite homemade or store-bought shrimp cocktail sauce.

Mix:
1 large cream cheese, softened
1 small onion, grated
a squirt of lemon juice
Worcestershire Sauce
a little salt
a little catsup for coloring
Add: 1 can of
shrimp, drained, and a little mayonnaise
Mix everything
together and let set in refrigerator for a few hours. Serve with potato chips
or crackers.

3 large cream cheese, softened
1 can of tomato soup
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped onion
2 cans of shrimp, drained and
smashed with fork
1 cup mayonnaise
2 pkgs. Knox gelatin
1/4 cup water
Warm soup and add
softened cream cheese. Mix together thoroughly and add all chopped ingredients.
Combine shrimp and mayonnaise, and add to cream cheese mixture. Mix gelatin and
water. Immediately add to mixture and pour into a greased mold. Make a
day ahead. Serve with crackers.
