SWEET POTATO CASSEROLE

3 cups boiled sweet potatoes

1 cup sugar

1 tsp. salt

1/2 stick oleo

1/2 cup milk

2 eggs

1 tsp. vanilla

 

Cream sugar and oleo together, add eggs, and beat well.

Add  salt, potatoes,  milk, and vanilla.  Beat till all is mixed well. Pour into a large rectangular pyrex dish. Add topping. Bake at 350 degrees for 35 mins.

 

Topping: 1 cup brown sugar

         1 cup ground pecans

         1/2 cup flour

1/2 stick oleo

 

Using pastry blender or fork, cut in sugar and oleo. Add flour and mix until smooth. Add nuts. Put on top of casserole.

4 cups boiled sweet potatoes or yams

1/4 cup melted butter or margarine

1/4 cup cream

2 Tbsp. dark brown sugar

1/4 tsp. cinnamon

1/4 tsp. ground nutmeg

1/2 tsp. salt

1 Tbsp. vanilla

      1 small can pineapple tidbits, drained, reserve syrup

3 ripe bananas, peeled and sliced

miniature marshmallows

1/3 cup maple syrup or honey

1/3 cup orange juice

1/3 cup pineapple syrup

1 tsp. rum

 

Mash potatoes or yams well. Beat in melted butter, cream, brown sugar, cinnamon, nutmeg, salt and vanilla extract. Arrange a layer of potato mixture in bottom of a well buttered 1 1/2 qt. baking dish. Top with layers of pineapple, bananas and marshmallows. Combine maple syrup or honey, orange juice, pineapple syrup. and rum. Pour over fruit layers. Repeat layers, ending in marshmallows. Pour remaining syrup over top. Bake at 350 degrees for 25 mins. or until lightly browned.
