BARBECUE

1 lb. hamburger

1 onion, chopped

1 pepper, chopped

2 stalks celery, chopped

 

Brown hamburger in skillet; Cook until tender.  add onion, pepper, and celery.

 

Put in measuring cup:

 

          1/2 cup catsup

          1 Tbsp. worcestershire sauce

          1 Tbsp. mustard

          1 Tbsp. vinegar

          sugar (one or more good Tbsp.).

 

Simmer for one hour.

 

BEEF-MUSHROOM QUICHE

1 unbaked (9 inch) pie shell

1/2 lb. ground beef

1 can cream of mushroom soup

1/2 cup milk

2 eggs, lightly beaten

2 Tbsp. chopped chives

1/4 tsp. salt

pinch white pepper

dash bottled red pepper sauce

1 can (4 oz.) mushroom pieces, drained

3/4 cup (3 oz.) shredded Swiss cheese

 

     Preheat oven to 450 degrees. Prick bottom and sides of pie shell with fork.  Bake 12 to 15 minutes.  Remove from oven. Reduce oven temperature to 350 degrees.

 

In small skillet, cook ground beef until browned, stirring frequently. Remove with slotted spoon and set aside.

 

In medium bowl, mix mushroom soup, milk, eggs, spices and bottled red pepper sauce. Add ground beef, mushrooms, and cheese. Pour into partially baked pie shell. Cover edges of pie shell with foil. Bake for 60 minutes or until knife inserted in center comes out clean. Makes 6 servings about 370 calories each.
