"BUSY DAY" CHEESECAKE

Soften 8 oz. cream cheese and blend with 1/2 cup milk until smooth. Add 1 1/2 cups more milk and a pkg. of lemon instant pudding mix. Beat slowly with egg beater about one minute, until smooth. Do not over beat. Pour at once into purchased graham cracker crust. Sprinkle graham crumbs lightly on the top. Chill at least 1 hour and garnish with strawberries if you wish. Serves 8.

 

CHEESE CAKE

Preheat oven to 375 degrees

All ingredients to be are room temperature

 

1/2 box graham cracker crumbs

1/2 stick butter, melted

4 Tbsp. sugar

1 tsp. cinnamon

 

Mix above together and line spring pan 1/2 the way up in pan. Set aside.

 

Mix by hand or low speed on mixer:

 

2 pkgs. (8 oz.) cream cheese

1 cup sugar

1 tsp. vanilla

4 eggs - one at a time

Fold or blend in 1 pt. Sour Cream.

 

Pour into pan lined with graham cracker crumbs. Bake 1 hour. Turn off oven -DO NOT OPEN OVEN DOOR- let in oven for 2 hours. Take out and refrigerate. Top with Strawberry Glaze, if desired. (Recipe follows)

 

STRAWBERRY GLAZE

1 cup berries

1 cup sugar

3 Tbsp. cornstarch

1/2 cup water

 

Mash berries. Stir together sugar and cornstarch. Gradually stir in water and crushed berries. Cook over medium heat stirring constantly until mixture thickens and boils. Let boil one minute. Stir in a few drops of red food coloring (optional).
