OATMEAL
CHOCOLATE CHIP CAKE

1 3/4 cup boiling water.
1 cup uncooked oatmeal
1 cup brown sugar
1 cup granulated sugar
1 stick margarine
2 large eggs
1 3/4 cup flour
1/2 tsp. salt
1 tsp. baking soda
1 Tbsp. cocoa
1-12 oz. pkg. chocolate chips
3/4 cup nuts, chopped (optional)
Pour boiling water
over oatmeal. Let stand 10 mins., add sugar and margarine. Stir. Add eggs, beat
well. Blend in flour, soda, salt, and cocoa. Add 1/2 pkg. of chocolate chips.
Pour batter into greased and floured 9x13 pan. Sprinkle nuts and remaining
chips on top. Bake at 350 degrees for 35-40 mins.

Break
apart a purchased Angel Food Cake. Put pieces in a 13x9 inch glass dish. Mix
one pkg. pistachio pudding with 2 cups milk. Add a small container of Cool Whip
and spread over cake. Top with coconut and cherries.

box yellow cake mix 3/4 cup Crisco
oil

eggs 1 box instant
vanilla pudding
Mix well. Add 10
oz. of 7 Up. Mix well and bake in greased 9x12 inch pan for 35 to 40 minutes at
350 degrees.
TOPPING:
1 cup granulated sugar 2 eggs, beaten
8 oz. can crushed pineapple 1 stick oleo
and juice 1 heaping Tbsp. flour
Combine all
ingredients and stir over heat until thick. Add 1 can coconut. Pour over hot
cake.
